2 of my most favorite things: eggs and avocado! This recipe is so easy and changes up your regular morning breakfast routine. Wow guests and friends with this recipe as it’s perfect for entertaining since the cook time is just 15 minutes.
Avocado Baked Egg

Ingredients
- 2 Pastured eggs
- 1 Avocado
- ¼ Lemon
- Pinch of sea salt/pepper
- Pinch of turmeric - optional
- 1 Teaspoon chia seeds - optional
Instructions
- Preheat oven to 425
- Cut avocado in half - try to be as even as possible
- Scoop out avocado, leaving some left on the rim
- Place avocado on a baking sheet
- Crack one egg into each side of the avocado
- Add lemon juice, salt, pepper (and turmeric & chia seed if using)
- Bake for 15 minutes or until yolks are set
- Optional: Take scooped out avocado and make a mash to eat with your baked eggs!
