<p>One morning I was fooling around in the kitchen trying to create something new and different for breakfast. I usually have a smoothie because it&#8217;s the fastest and easiest option, but I had time to sit and enjoy so I wanted to embrace it! I threw together all of my favorite seeds (including pomegranate, such a powerful taste!) and voila! This super seed breakfast bowl was born. Filling, nutrient dense and delicious.<br />

<p>I love how simple this recipe is both in prep, cooking time and taste. Cheese or hot sauce can spruce it up if needed but on its own it’s packed with flavor. What’s great about this recipe is that you can change up the veggies so it’s never boring. If I know I’ll be on the go, I’ll make mini’s the night before so I can grab something quickly for a protein filled breakfast.<br />

<p>Ingredients</p>
<p>~1 ripe avocado<br />
~Juice of 1/2 lemon<br />
~Sea salt<br />
~2 slices whole-grain bread, toasted<br />
~Red pepper flakes<br />
~Extra-virgin olive oil, for drizzling</p>
<p>Instructions</p>
<p>~Cut the avocado in half, remove pit, and scoop the flesh into a bowl. Add the lemon juice and sea salt, to taste. Mash the ingredients together with a fork, keeping the texture slightly chunky.<br />
~Spread half the mash onto each piece of toast and garnish with some red pepper flakes and a drizzle of olive oil. Serve immediately.<br />

This breakfast is filled with protein between the oats, chia seeds and almond milk (and even more if you make the almond milk from scratch!)<br />
