Cinnamon Covered Almonds

Almonds are my go-to snack when I’m on the go. To have a sweeter option that’s super healthy and easy to make, try adding cinnamon and roasting for an hour and voila! Something a little different for your afternoon pick-me-up.

Ingredients
  • 2 cups whole almonds (unsalted)
  • 1 tablespoon cinnamon
  • 1 tablespoon extra virgin olive oil
  • ½ teaspoon salt
  • Spring of Rosemary (optional)
Instructions
  1. Preheat oven to 250
  2. In a bowl, mix almonds, cinnamon, olive oil and salt
  3. On a baking sheet, spread almonds out in a single layer
  4. Roast for 1 hour and serve
  5. Optional: Add Rosemary on top of almonds
