White Bean & Spinach Salad

Ingredients
  • 4 packed cups spinach
  • 1 (15-ounce) can cannellini beans (rinsed and drained)
  • ½ small red onion, thinly sliced
  • ½ pepper chopped (optional)
  • 1 large lemon
  • 1 teaspoon lemon zest
  • 3 tablespoons extra-virgin olive oil
  • Himalayan sea salt & pepper to taste
Instructions
  1. Chop up spinach into smaller pieces
  2. Combine spinach, beans, onion in a large bowl
  3. Zest lemon onto salad
  4. Squeeze entire lemon on salad and mix well
  5. Add in EVOO, salt & pepper to coat
