Turkey Meatballs

Ingredients
  • 1 pound organic ground turkey
  • ¼ cup quinoa
  • 2 scallions, minced
  • ½ carrot, chopped finely
  • 1 lime, juiced
  • 1 teaspoon ginger, minced or grated
  • 1 teaspoon parsley
  • 1 teaspoon cilantro
  • Salt & pepper to taste
Instructions
  1. Preheat oven to 350F
  2. Combine turkey and quinoa in large bowl
  3. Add scallions, carrot, parsley, cilantro, ginger, lime juice, salt & pepper
  4. Mix together well
  5. Roll entire mixture into your choice of size balls
  6. Place balls on parchment paper lined baking sheet
  7. Bake for 10-20 minutes until meatballs no longer pink in the middle
