Farro Tabbouleh Salad

Ingredients
  • ½ cup of Farro
  • ¾ cup of parsley, finely chopped
  • 1 garlic clove, minced
  • ⅓ red onion, finely chopped
  • Handful of cherry tomatoes, cut in halves
  • ½ cup mint leaves, finely chopped
  • 1 lemon
  • Zest of 1 lemon
  • 2 tablespoons of extra virgin olive oil
  • Salt and pepper to taste
Instructions
  1. Combine ½ cup of farro with one cup of water and bring to a boil, reduce heat to low, cover and cook for approximately 10 minutes
  2. Remove farro from heat and let it sit for 5 minutes in covered pot
  3. In a bowl, combine garlic, parsley, mint, onion, tomatoes and olive oil
  4. Zest the lemon and add to bowl
  5. Squeeze ¼ – ½ of the lemon into bowl
  6. Add farro to bowl once it has cooled
  7. Salt and pepper to taste
  8. Can be served hot or cold
