Farro Tabbouleh Salad

Ingredients
- ½ cup of Farro
- ¾ cup of parsley, finely chopped
- 1 garlic clove, minced
- ⅓ red onion, finely chopped
- Handful of cherry tomatoes, cut in halves
- ½ cup mint leaves, finely chopped
- 1 lemon
- Zest of 1 lemon
- 2 tablespoons of extra virgin olive oil
- Salt and pepper to taste
Instructions
- Combine ½ cup of farro with one cup of water and bring to a boil, reduce heat to low, cover and cook for approximately 10 minutes
- Remove farro from heat and let it sit for 5 minutes in covered pot
- In a bowl, combine garlic, parsley, mint, onion, tomatoes and olive oil
- Zest the lemon and add to bowl
- Squeeze ¼ – ½ of the lemon into bowl
- Add farro to bowl once it has cooled
- Salt and pepper to taste
- Can be served hot or cold
