This salad screams summer! If you have access to a grill, throw the peaches on and enjoy the sweet tastes of summertime. I love the combo of peppers and peaches – so fresh!
Summer Kale and Peach Salad

Ingredients
- 4 ripe peaches
- 1 red pepper cut into pieces
- 1 yellow pepper cut into pieces
- 1 head of kale, chopped
- ½ red onion diced
- 2 cloves of garlic minced
- Juice of a lemon (1/2 – 1 depending on your preference)
- 1-2 tablespoons of extra virgin olive oil
- Salt & pepper to taste
Instructions
- Cut peaches in half and put them on the grill so they get slightly charred (if you don’t have a grill, heat them in the oven)
- In a bowl, combine red pepper, yellow pepper, onion, garlic and kale and massage in the juice of the lemon
- Add in olive oil and salt & pepper
- Once peaches are done, they will be super soft and easy to cut into pieces – add them to the bowl and enjoy!
