This smoothie tastes just like summer! I recently got a Vitamix for my wedding (I have a feeling I’m going to get addicted to this thing!) and can’t stop playing with different smoothie concoctions. In Thailand, I ate mango at least once a day so I plan to keep that up as much as possible and this smoothie is a perfect start. I’m willing summer to hurry up and get here with this baby!
Tropical Coconut Smoothie
Serves 2
Ingredients:
~ 1 banana
~ ½ cup pineapple (fresh or fresh)
~ ½ cup mango (fresh or frozen
~ ¾ cup coconut milk
~ Shredded coconut for garnish
Directions:
~ Blend banana, pineapple, mango and coconut milk
~ Garnish with shredded coconut
~ Serve immediately
